Apples and cinnamon go together like toast and jam. This time of year is perfect for apple pies, cakes and ciders. Apple is a difficult flavour to capture or add onto tea leaves, which have their own astringency, so I choose a mellow and sweet honeybush to blend with the apples and cinnamon spice. It doesn’t take away from the warm sweet spice, and helps the flavour last in the cup. If you let this infusion brew longer, the cinnamon begins to add natural sweetness.
