Jin Guan Yin / Golden Goddess - Fujian



金观音 (Jīn guānyīn) Golden Goddess
This black tea from Fujian is produced by a highly skilled tea producer, He Wei Zhong, who continually creates teas from adapting production techniques. The Guan Yin cultivar is typically used to produce Iron Goddess of Mercy oolong tea also know as ‘Tie Guan Yin’. The name of this tea literally translates into Golden Goddess of Mercy Black. Guan Yin is the name for the Goddess of Mercy/Compassion from the Buddhist religion.
The infusion of the Guan Yin is low in tannins, so the brew is very aromatic with heady floral notes and a sweet finish of dried fruits. The large wiry leaves are great for infusing in a Gaiwan, a small covered cup used for small short concentrated infusions. If using this method, use half to 100mL water and shorten steepings to 1min, - 30sec - then 45 seconds.
