Bai Ye No. 1 is amongst the newest fashionable cultivars. It has been cultivated only since the 1990s, but its renown has spread well beyond Anji County in Zhejiang Province, where it originates. It was named “white leaf” after the pale yellow, almost white colour of its leaves, which are distinctly marked by a green central vein. Bai Ye Yi Hao (겟秊寧뵀), or White Leaf #1, is the most widespread cultivar for Anji Bai Cha, another well known tea grown in Zhejiang Province. This cultivar has been used to produce a tea rolled in the traditional Longjing style in the southwest of Zhejiang province

 The beautiful flat leaves of the Bai Ye are a  delightful tender green colour. When infused, the liquor is silky sweet and full. Its dominant vegetal character (bok choy) is vitalized by floral notes and a fine acidity reminiscent of green apple. A tea that asserts itself gently.

Another steeping method of Longjing leaves is to use 3-4 g in 150mL water with decreasing infusion lengths of 30sec (first infusion), 20sec (second infusion) then 15 seconds (third infusion)
