Blue Pea Flowers - cut

The petals of the Blue Pea Flower, (Latin: Clitoria ternatea), have been used since time immemorial to add colour to celebratory drinks in various locales around the world. For centuries, the Thai people have had a love affair with a syrupy beverage known as nam dok anchan. This fabulous beverage made with dried flowers, lime juice and sugar is as delicious as it is easy to prepare.  A small amount of these flowers goes a long way. Adding a drop of lemon juice turns the brilliant blue coloured infusion purple.
