茉莉银针 (Mòlì yín zhēn) Jasmine Silver Needle
Yin Zhen, or Silver Needle, is a prized Chinese white tea made from only the finest buds. Traditionally produced in Fujian Province, it is now also grown in Yunnan, where the local DaYe (Big Leaf) variety offers a distinct flavour profile.
The buds are carefully withered, often sun-dried on bamboo trays, until fully dry.
For jasmine-infused Yin Zhen, unopened jasmine flowers are handpicked early in the day to preserve their natural scent. Overnight, they are layered with the tea buds, releasing their fragrance as they bloom. By morning, the flowers are removed and replaced with fresh ones, a process repeated five to seven times for high-quality jasmine tea.
Yunnan-grown Silver Needle tends to be larger, with a yellow-white appearance rather than the green-white hues of Fuding Silver Needle. It offers a richer body with fruity and honeyed notes, while Fuding Silver Needle leans toward a fresh, floral profile. This jasmine-infused Yin Zhen combines an intense jasmine fragrance with a silky-smooth texture and lingering honeyed florals.
