Darjeeling teas come from the Darjeeling region nestled in the foothills of the Himalayas in north eastern India. The tea has been granted a geographical indication to protect the product from imitation. Darjeeling Tea gets its distinct flavour from a unique and complex combination of agro-climatic conditions: a muscatel aroma and flavour and color of a light golden liquor.
Flush refers to the plucking of a tea plant harvest. The first flush is first harvest in the springtime after the tea plants awaken from their winter dormancy, between March - April. First flush Darjeelings have a unique processing developed in recent years which gives the leaves a more green hue and taste. The process is closer to an oolong than black, but is still officially considered a black tea. The new leaves are given a long wither (controlled wilting) which removes most of the moisture content. This lowers the oxidation ability of the enzyme inside the tea leaves, thus keeping them a lighter green colour.
This Singell tea is from 160 year old seed-grown tea plants is cultivated using biodynamic methods. The infusion is a clear, lively and balanced liquor, with an aromatic richness. Herbaceous, floral and slightly fruity notes bringing a surprising lightness to this fine and thirst-quenching tea.
